Lobster Mac Cheese is the perfect meal for a cold night in with friends. Serves 4
Ingredients
225g macaroni
500ml milk
60g unsalted butter
30g plain flour
240g gruyere cheese, grated
120g mature cheddar, grated
120g parmesan, grated
1/2 tsp black pepper
Salt, to taste
1/2 nutmeg
300g lobster meat
80g fresh breadcrumbs
Directions
1. Preheat the oven to 175 degrees Celsius.
2. To a large pot of boiling salted water, add the macaroni and cook al dente, according to the directions on the package. Drain well.
3. Heat the milk in a small saucepan, but don't allow it to boil. In a large saucepan, over medium heat, melt the butter. Add the flour to the melted butter and stir until thickened, about 3 minutes.
4. Slowly whisk in the warm milk, a little at a time. The slower you add the milk the thicker the sauce will be.
5. Mix the cheddar cheese, gruyere cheese, and 1/2 of the parmesan cheese into the sauce. Reserve the rest of the parmesan for the top. Then add the pepper and nutmeg to the sauce, stir until combined. Add salt to taste.
6. Add and mix the lobster meat with the sauce.
7. Butter the base of a baking dish, then add alternative layers of the macaroni then the sauce. make sure the top layer is sauce.
8. Finally, sprinkle the breadcrumbs and the rest of the parmesan over the top. Place the dish in the oven for 20-25 mins, until the contents are bubbling.

As well as nutmeg, you can add mustard powder, and parsley.
