These homemade crab cakes are delicious and easy to make.
Ingredients
350g white crab meat
1 large egg
2 tsp lemon juice
3 tbsp mayonnaise
1 tsp sriracha sauce
2 tbsp fresh parsley, minced
3 spring onions, chopped
1/2 cup breadcrumbs
1/2 tsp sea salt
1/4 tsp ground black pepper
1 tbsp light soy sauce
2.5cm fresh ginger, minced
4-6 cloves of garlic, minced
1 small red chilli, minced
Mix all the ingredients in a bowl - by hand is best, although it is a bit messy! Take a small handful of the mixture at a time and and mould into a round, flat 'cake'. Place on a lightly greased plate. Continue until all the mixture is used up. Do not let the cakes touch each other.
Then chill for an hour.
Cook in a shallow frying pan with olive oil, until both sides are golden brown.
Serve either in a roll or individually with a crisp green salad and fresh, crusty bread.
